Our story

Created by Pascal MONCELLI in 1993, the Domaine d’Éole began its story with the transition to organic agriculture of 17 hectares of vineyards formerly used as a cooperative winery. A few months later, Matthias WIMMER, director of the estate for 30 years, begins his story in the Alpilles after starting his career in Languedoc. At that time, the estate produced about 500hl of wine, including 2 reds (Cuvée Léa and Éole rouge) and 1 rosé.

However, it was only after the acquisition by Christian RAIMONT in July 1996 that the estate officially started marketing its wines as organic and began its development towards the Domaine d’Éole as we know it today. This evolution will go through the renewal of the vineyard (13ha uprooted and replanted) and its expansion (17ha of new plots) over thirty years.

The result of this metamorphosis will be the decrease in the proportion of Carignan, the increase of Syrah amount and the planting of white grape varieties, initially Rolle/Vermentino and Roussanne in 2001, then Grenache blanc as early as 2002.

From 2003 to 2005, the plantation of the Pont Romain plot with 2ha of Grenache noir and 1ha of Syrah planted on an alluvial soil at the foot of the Alpilles was also marked, giving the vines exceptional potential that forms the basis of our red wines.

The winery has also intensely developed over nearly 30 years with the construction of an extension for our barrel cellar in 2003, and the increase in our volume of stainless steel tanks in 2016 and 2022 to meet the growth of the vineyard and the increasing demand for rosés and whites.

Thus, fallen under the charm of the wines and the terroir of the estate, and convinced by the experience and philosophy of the team at work, Marc REBOUAH, a wine enthusiast, bought the estate at the end of 2017 to inscribe it in a logic of continuous search for quality in harmony with the splendid nature that surrounds it.

Finally, in June 2018, Ludovic VANÇON, oenologist from SupAgro Montpellier, arrived to assist Matthias in setting up a gradual and intelligent transition of the estate management and the mastery of the Éole vineyard and wines. Since January 2023, he has taken up the torch to continue surprising and pleasing you with this whole story.

The team

Ludovic VANÇON

Director of Eole, having joined the team in 2018 as an ecologist and oenologist with a degree from SupAgro Montpellier, and a love for Mediterranean biodiversity. He underwent further training under his mentor, Matthias WIMMER, to perfect his skills in his passion for managing the Eole estate.

Mohammed LAARAYBI

Joined the team in 2000 and is responsible for manual labors portion of Eole’s vineyards. Known throughout Provence as the man who prunes quicker than his shadow.

Olivier HERBAUX

Responsible for mechanized labors of the vineyards. His sense of perfection and desire to best respect the vine contribute to the estate’s success. Since joining the team in 2004, he has mastered the use of the tractor and all of its tools.

Marie GALLERON

Joined Eole in 2022 as sales and administrative development officer. Her energy and desire to learn about Eole’s history and operations made her a valuable asset to the team.

Dylan AMARI

Dynamic, fast learner who joined the team as cellar master, tractor operator, and versatile worker in July 2022. He has integrated and progressed rapidly in vineyard and cellar work and is a promising future versatile manager.

Chloé BLANC

Guest relations officer at the cellar during the season and weekends.
