Aeternus – 22/05/13: A pleasing wine, indulgent and refreshing. As for its sensory profile, everything has been done to develop a wine that is indulgent “to please people who will drink it for dessert on a fruit tart, or alone for an aperitif.”
On the nose, Brut d’Éole reveals aromas of citrus, subtle candied fruits, crushed fresh strawberries and apricots.
On the palate, the attack is frank, with fine bubbles, and this sparkling wine releases flavours of rhubarb and red fruits. Finally, a good acidity gives it a nice length.
Food and wine pairings: Brut d’Éole 2020 is an aperitif wine that can also be paired with fish or crustaceans.
Singulars – 22/03/31: Perfect for an aperitif, it will very advantageously replace champagne. Its fine bubbles enhance its red fruit aromas. Made with Rolle, Grenache Blanc, and Syrah, it is instantly appealing.
A table – n°40 june/august 2020: My pick of the day: a sparking rosé wine produced using the traditional method. Looking for a lively and refreshing fizz? Then this natural brut without any added sweet liqueur from Domaine d’Éole is the perfect choice. A blend of rolle, grenache blanc, and syrah grapes, it boasts flavors of red berries and rhubarb, complemented by the lively bubbles. Ecoréseau Business – july-august 2019: All the fruit and finesse of these early-harvested grapes are expressed here in the purity of zero dosage. This rosé from Provence expresses delicate notes of red fruits (gooseberry, raspberry…) and citrus. Its lively, thirst-quenching and gourmet palate is accompanied by notes of pralines, baked strawberries and rhubarb. Served between 9 and 11°C, it is the perfect accompaniment to an aperitif, an anchovy dish or a fruit tart.
BlindTaste34 – July 17th, 2018: The Garden of Eden was filled with lush and varied vegetation, and it also housed the Tree of Life, which provided plentiful and delicious fruit to fulfill the needs of Adam and Eve. This earthly paradise was fed by a prodigious water source that sprang from the ground before falling in fine droplets on the vegetation.
The robe is apricot-pink with coppery reflections.
The bouquet exhibits refinement with its fragrances of red currant and quinine in a Garden of Eden with freshly cut grass. On the palate, the fine bubbles burst to release a wine that is full of tension and particularly invigorating. Roundness and indulgence will wait to appear until the reinforcement of raspberry and strawberry, which will end up uniting with a sculptural kumquat in retro-nasal olfaction. The finish will reveal its forbidden fruit in the form of a delicious St Genix covered in red pralines.
If you wish to enjoy this nectar in a heavenly location with friends, it will be excellent company.
L’Obs – june, 21/27 2018 – Sunshine and freshness in our glasses: A delicate delicacy that seduces us with the finesse of its bubbles, fruitiness without extravagance, of true sincerity, with its notes of red fruits (currant, raspberry) and its tart citrus notes. The palate is lively and refreshing, with flavors of grenadine reminiscent of our childhood. A pure delight.
La feuille de vigne – June 19, 2018: A very pale sparkling rosé made in the traditional method from grape varieties and terroirs of Provence. The blend is composed of 45% Rolle, 45% Grenache Blanc, and 10% Syrah, giving it its light color. This un-dosed wine seduces with its freshness, fine bubbles, liveliness, delicate and elegant bouquet, evoking crunchy red fruits and citrus.
68MAG (L’Alsace) – 18/05/14: A very pretty string of fine bubbles, a nose that seduces with aromas of small red fruits and a zest of citrus. The palate is round and flavorful, yet fresh with notes of ripe strawberries. Served with anchoïade, it almost feels like vacation!
Le monde du luxe – Elégance rosé 2017 – 17/07/14: In this traditional Brut Nature Rosé method, we can tell from the first whiff that we’re about to be overtaken by a whirlwind of dancing minerality and crunchy yellow fruits in a symphony of little reds. The palette takes us on a tender journey between straightness and magnificent comprehension of the material. We’re in love with it and this blend gives us an irresistible longing for fish in sauce, but it’s also so good as an apéritif.
L’Alsace – June 15, 2017: Fine bubbles in Provence are not very common. This zero dosage rosé brut from Domaine d’Eole is a pleasant surprise. It has aromas of small red fruits with citrus notes that bring freshness. The palate is indulgent with notes of very ripe strawberries, praline, and sweet caramel. Thanks to the zero dosage, this brut is an elegant and refreshing wine with fine bubbles. It can be enjoyed as an aperitif, but also with anchovy dip or a fruit tart.
Aujourd’hui en France – August 26, 2016 – Des bulles rosées: A bottle with sincere and joyful bubbles. Born in the heart of the Alpilles, it is natural – from grape to bubble, of great finesse. Its lively, refreshing, and delicious mouth is expressed with notes of praline, strawberry, and rhubarb.
Saveurs – May 2016: Bright. Organic and hand-picked, this blend of different grape varieties typical of a sunny Provence is full of freshness and finesse. With notes of red fruits (currant, raspberry) and citrus, and a crisp and refreshing mouthfeel, this un-dosed brut rosé (no residual sugar) is the perfect match for cocktails and aperitifs.
Saveurs – Dec. 2014 – Jan. 2015 : The purity of the fruit stands out even more since it is an extra-brut. There is no sugar in the mouth for this bold-tasting rosé (blackcurrant, raspberry) that releases caramelized notes. Ideal with apple roses (slices arranged in the shape of a rose on puff pastry and caramelized in the oven).
Pleine Vie – june 2014: We love the Provençal origin of these bubbles, their very refreshing tonic freshness, and their notes of citrus and cooked strawberry (certified organic wine). It goes well with anchovy and its crunchy vegetables.
Le Guide des Meilleurs Vins de France 2013 (note 13,5/20): With a distinctive personality, the sparkling natural brut has a strong fruity aroma, with notes of Tarte Tatin and rhubarb. It reveals a refreshing and soft taste, ideal for both summer and winter consumption.
La Provence à Table n°5 december 2012: This zero dosage brut nature has a rather pale pink color in the glass, made in the method champenoise. It is characterized by fine bubbles, very light and pleasant in the mouth. The foam is discreet and smooth, not too much or too little. Fruity aromas, especially of candied apples and sweet caramel, stand out from it. It can be enjoyed as an aperitif and even with food, such as with fish.
