A new breath with a first sulfite-free rosé

Welcome to the Domaine d’Eole, located at the foot of the Alpilles and at the gates of Eygalières. The estate boasts thirty hectares of vineyards, certified organic since 1996, with typically Mediterranean grape varieties. The vineyard benefits from a subtle balance between the Mistral wind, heat, rolling pebbles, and clay soils, sublimated by masterful expertise and passion passed down through generations. Today, the estate is owned by Marc Rebouah, with historical director Matthias Wimmer leading the way since the beginning in 1993. Ludovic Vançon, a young oenologist and ecologist, benefits from Wimmer’s expertise in Mediterranean wines and terroirs through a passionate transmission of knowledge.

The constant quest for quality has resulted in the creation of two unusual wines for this vintage: “Souffle d’Eole“, an Alpilles IGP rosé wine with a bistro-style flavor, aged in 700-liter eggs to give it more roundness, without added sulfites (which explains its bright pink color) and made from four grape varieties. All to allow it to linger and be enjoyed at the table, paired with grilled meats or tasty composed salads.

“Creating a first wine without added sulfites was a challenging process: high-quality grapes, nitrogen inerting to protect the wine against oxidation, and precise blending give this rose, with raspberry reflections, a particular balance that makes it an ode to purity and elegance,” explains Ludovic Vançon.

Autre vin d’exception, le blanc “Vermentitude“, un 100% Vermentino qui exprime sa singularité tout en dentelle; on découvre un fruit complexe, avec une pointe de citron vert, de poire et de pêche, puis un volume et un gras envoûtant. C’est un vin tendre et profond qui doit son relief à son élevage en œuf béton sur lies totales, choisi pour accentuer son côté nature, “Ces deux cuvées particulières, par leur élaboration et leur interprétation du terroir splendide des Alpilles trouvent leur place au cœur d’une gamme variée de vins blancs, rosé et rouges à découvrir dans les restaurants de la région ou directement au caveau. Qu’importe le lieu, les vins du Domaine d’Eole raviront aussi bien vos apéritifs estivaux que vos diners entre fins gourmets”, conclut l’œnologue.
