It is produced solely from trees grown in organic culture in parcels located in Eygali&#xE8;res at the foot of the Alpilles. We pick these olives early in the season with a comb and net, and bring them directly to the mill where they are crushed without delay in a modern mill to extract the pure fruit and its subtle flavors. The "green fruity" character reveals itself on the nose with intense aromas of freshly cut grass, raw artichoke and almond. The mouth is fresh, delicate, and light, without any oily sensation, with an amazing length marked by a fruity and spicy taste, and a lingering sharpness in the back of the throat that signals quality.
